Chef Dimitri Proost trained in classic French cuisine at Stella Maris (Merksem) and honed his craft at renowned establishments including ’t Fornuis* (Johan Segers). His international journey led him to a traditional Japanese apprenticeship at Yamazato* (Amsterdam), where he cultivated a deep passion for Japanese cuisine.
