Brewed by Sekiya Brewery under the brand name Houraisen in Aichi Prefecture, Kuu is a Junmai Daiginjo that uses Yamadanishiki rice (both koji and kake) polished to 40%, followed by one full year of maturation before release. This aging brings out mellow aromas, fruitlike sweetness, and balance.
